Indian Style Stir Fried Chicken with Vegetables

Ingredients

Canola oil 2 Tablespoon
Chopped onions 1⁄2 Cup (8 tbs)
Finely chopped ginger 1 Tablespoon
Minced garlic 2 Teaspoon
Cumin seeds 1⁄2 Teaspoon
Tomato sauce 1⁄2 Cup (8 tbs)
Garam masala 1 Teaspoon
Cayenne pepper 1 Teaspoon , ground
Salt To Taste
Boneless skinless chicken breasts 1 Pound , cut into 0.5 inch pieces
Green bell pepper 1 Cup (16 tbs) , cut into 0.5 inch cubes
Red onion 1 Medium , cut into 0.5 inch cubes
Tomato 1 Cup (16 tbs) , cut into 0.5 inch cubes
Canned pineapples chunks 1⁄2 Cup (8 tbs)
Water 1⁄2 Cup (8 tbs)
Plain yogurt 1⁄2 Cup (8 tbs)
Finely chopped cilantro 2 Tablespoon

Directions

Heat oil in a large skillet, over medium heat. Add chopped onions, ginger, garlic and cumin seeds and stir frequently till color changes, about 4 minutes.

Stir in tomato sauce, garam masala, cayenne pepper and salt, reduce the heat and let it simmer for 5 to 7 minutes.

Add the chicken, simmer uncovered for 5 to 7 minutes, stirring occasionally, until chicken is partially cooked.

Stir in bell pepper, red onions, tomatoes and pineapple chunks and water. Cover and simmer on low heat, until the chicken is cooked and the water is dry.

Stir in the yogurt. Simmer for a few minutes, stirring occasionally till chicken and vegetables are consistently coated with the sauce.

Serve hot, sprinkled with cilantro.
