Indian Dahi Vada

For wada
Mung dal 1/2 Cup (8 tbs)
Udad dal 1/4 Cup (4 tbs)
Salt 1/4 Teaspoon
Minced ginger 1/2 Teaspoon , minced
Water 1/4 Cup (4 tbs)
Chopped fresh coriander 1 Tablespoon
Safflower oil 1/2 Cup (8 tbs) (For Deep Frying)
Paprika 1/4 Teaspoon
Tamarind sauce 1/4 Cup (4 tbs)


For wada, soak both daals in water overnight, drain.

In blender, combine daals, salt, ginger, water to make very thick paste.ln bowl mix lentil paste, coriander.

Heat oil in small pan over medium heat.

Slip heaped teaspoonful of mixture into oil, deep-fry until golden brown.

Drain on absorbent paper.

Makes 16 wadas.

Soak wadas in hot water for 3 mins, squeeze water out by pressing each wada between palms of your hands, arrange in yogurt sauce and tamarind sauce

Sprinkle with paprika, refrigerate.
