For the rice | ||
Basmati rice | 1 Cup (16 tbs) | |
Water | 2 Cup (32 tbs) | |
Ghee | 1/2 Tablespoon | |
For the boondi raita | ||
Yogurt | 1/2 Cup (8 tbs) | |
Cumin powder | 1 Pinch | |
Red chili powder | 1/2 Teaspoon |
GETTING READY
1. Take a bowl with wheat flour. Add salt, a pinch of turmeric powder, red chili powder and mix all these dry ingredients well.
2. Add 2 tablespoons of oil and mix well.
3. Gradually add water and knead the dough to a consistency slightly harder than the roti dough. Once the dough is ready, cover and let it rest for about 10 minutes before turning off the stove.
MAKING
To prepare the dal dhokli:
4. Take the left over Gujarati dal and keep it to boil on a medium heat.
5. Meanwhile, roll the dough very thin and cut it into small pieces using a pizza cutter. Add them into the simmering dal, stir well. If the dal thickens , add some more water and stir. Let it simmer half covered for a few more minutes.
To prepare the rice:
6. Meanwhile, add basmati rice, salt, water and ghee to the rice cooker and turn it on to cook the rice.
To prepare the boondi raita:
7. Take yogurt in a bowl, add salt, cumin powder and red chili powder to it.
8. Add the boondi just before serving. Garnish it with some freshly chopped cilantro.
SERVING
9. Serve the dal dhokli garnished with freshly chopped curry leaves. cilantro and shredded coconut. Serve the curry warm with the cooked plain rice and boondi raita.
TIPS
When preparing the dough for dal Dhokli, keeping the consistency of the kneaded dough slightly harder than the chapati dough would require less flour for dusting while rolling the dough. If you use more flour for dusting, the dal curry would get thicker.
