Batata Vada

For wada
Potatoes 2 Large , half boiled and grated
Onion 1 Small , finely chopped
Minced garlic 1/2 Teaspoon , minced
Minced ginger 1/2 Teaspoon
Chopped fresh coriander 1/4 Cup (4 tbs)
Desiccated coconut 1 Teaspoon
Lemon juice 1 Teaspoon
Sugar 1/2 Teaspoon
For batter
Split pea flour 1/4 Cup (4 tbs)
Turmeric 1/4 Teaspoon
Salt 1/4 Teaspoon
Chili powder 1/4 Teaspoon
Water 1/3 Cup (5.33 tbs) (Adjust Quantity As Needed)
Safflower oil 1/3 Cup (5.33 tbs) (For Deep Frying)
Coconut coriander chutney 1/4 Cup (4 tbs) (For Serving)


To make wada mix all ingredients, adjust salt, chilli to taste.

Shape into 12 flat rounds.

Refrigerate for 1 hour to firm.

To make batter mix all ingredients (except water), add water to make thick batter.

Heat oil in small pan over medium heat.

Dip wada in batter, slip into oil few at a time, fry on both sides until golden brown.

Drain on absorbent paper.
