Fugiyas are made by mixing flour, eggs and coconut milk together with yeast. Some recipes use regular milk but I prefer the rich taste of coconut milk in my Fugiyas. Once the dough rises, the dough is grabbed with one hand and released with the other hand that is wet and the ball of dough is just dropped into the oil when it puffs up. This is an East Indian tradition that you can make in your own home!

All purpose flour 2 Cup (32 tbs) (unsifted)
Whole wheat flour 1/2 Cup (8 tbs) (sifted)
Egg 1 , beaten
Sugar 7 1/2 Tablespoon (3 tbsps per cup)
Yeast 1 1/2 Teaspoon
Warm water 1 Cup (16 tbs)
Canned coconut milk 200 Milliliter (plus extra Milk or Coconut Milk if required)
Salt 1 Pinch
Oil 2 Cup (32 tbs) (For deep frying)

In a bowl, combine warm water, yeast, sugar and set aside for 15-30 minutes until it froths.

In a bowl, combine all purpose flour, wheat flour and mix well.

Add flour mixture and sugar mixture in batches. Add salt and mix well.

Set aside and allow to rise for 1 hour.
