Learn how to make restaurant style Punjabi Dal Fry with Tadka at home - a popular Indian dal recipe from our chef Archana on Ruchkar Mejwani. Dal Fry tastes best with Jeera Rice.


Oil 1 Tablespoon
Butter 1 Tablespoon
Mustard seeds 1 Teaspoon
Cumin seeds 1 Teaspoon
Dry red chillies 3
Fenugreek seeds 20
Ginger garlic paste 1 Tablespoon (or Ginger Garlic crush)
Curry leaves 20
Onion 1 (chopped lengthwise)
Tomato 1 , finely chopped
Toor dal 1 Cup (16 tbs)
Moong dal 2 Tablespoon
Masoor dal 2 Tablespoon
Turmeric powder 1/4 Teaspoon
Asafoetida 1/4 Teaspoon
Masala mix 1 Tablespoon
Cumin powder 1 Tablespoon
Coriander powder 1 Tablespoon
Water 1 Cup (16 tbs)
Salt To Taste
Coriander leaves 1/4 Cup (4 tbs)



1. In a pressure cooker, cook all the pulses (Tur Dal, Moong Dal & Masoor Dal) together by adding turmeric powder and asafoetida. Remove it in a bowl and keep it aside.


2. For the tadka, in a pan heat oil & butter.

3. Add mustard seeds, cumin seeds, dry red chillies, fenugreek seeds, ginger garlic crush, curry leaves & coriander leaves. Saute everything well.

4. Add chopped onion, tomato & salt. Mix everything well. Cover it with a lid for 5 minutes and let everything cook.

5. In the pressure cooked dal add little water and mix well.

6. Then add mix masala, cumin seeds powder, coriander seeds powder & salt. Mix well.

7. Add this dal mixture to the tadka. Add little water and mix well.

8. Add coriander leaves and give a stir.

9. Cover it with a lid and let the dal simmer for 5 minutes.


10. Garnish it with a dollop of butter and serve hot.
