Full fat milk 1 Liter
Plain yogurt 1/2 Cup (8 tbs) (homemade)
Sugar 1 Cup (16 tbs)

1. First bring the milk and sugar to a good boil until it reduces the volume to almost half.

2. In another pan caramelize the sugar. Put half cup sugar and splash of water. Keep the flame medium to low.

3. Keep watching. It shouldn't burnt. The moment you see it started caramelizing, put in the hot milk. Stir well. Cook for 2 -3 minutes. it is done.

4. Now allow the milk to come in lukewarm temperature.

5. Make sure there should be no cream layer set on the top surface. So keep stirring. Or else take another bowl and transfer the milk in two bowls ( see the video) to drop down the temperature quickly.

6. Once it comes in right temperature, whisk the yogurt and mix in.

7. Put the milk in earthen pots or glass container. Cover it well with thick towel.

8. Allow the mishti doi set in warm place. Don't move it anywhere until it sets.

9. Give at least 14 hours to 24 hours and then check.

10. Deliciously rich and creamy mishti doi is ready.
