Eggplant with Spicy Tomato Dry Spicy Masala Baingan Baingan Masala Brinjal

This is a really easy and tasty Indian dish that is sure to stir up your taste buds. Delicious baingan tomato dry is ready to eat with pita bread, Indian naan, or rice.For this recipe we need few ingredients.


Eggplant 4
Tomato puree 1/2 Cup (8 tbs)
Crushed ginger 1/2 Teaspoon
Garlic slices 1/2 Teaspoon
Salt To Taste
Sugar 1 Pinch
Cinnamon stick 1
Turmeric powder 1 Teaspoon
Red chili powder 1/2 Teaspoon
Cumin seeds 1/4 Teaspoon
Garam masala 1/2 Teaspoon
Onion 1 Small , chopped finely
Coriander powder 1/2 Teaspoon



1. First cut the small eggplants into halves and apply some turmeric powder and salt and rub it nicely so that the turmeric and salt evenly coated.

2. Then make 3-4 gas mark back side of the every piece of eggplant.Now fry them into the hot oil.Fry them 1 minutes each side over medium heat.Once they are golden brown then take out from the hot oil.

3. Now in the same oil add cinnamon stick n cumin seeds.Then add garlic n crushed ginger and turmeric powder.Stir it.In this time you can add the chopped onion or you can add later.

4. Now add the tomato puree and salt.Give a good stir and let it cook for 3-4 minutes over medium heat.After that add the coriander powder and red chilli powder and again stir it well and cover it.

5. Now add suger and stir again and cover it up.In this time add the fried eggplant and garam masala and give a gentle mix.Put the cover for 30 second and they are ready.


6. Serve this delicious eggplant with rice or chapati.Enjoy...
