Mini Vegetable Crepes Tasty Snack Ideas

This is an easy recipe which shows how to prepare Instant Idli batter at home using Sooji/Rava ( Semolina/Cream of Wheat) and yogurt. You can then prepare these crepes instead of vegetable idlis to enjoy as a snack, for breakfast or for the road.

Ingredients

Sooji 1 Cup (16 tbs)
Yogurt 1 Cup (16 tbs)
Water 1 Cup (16 tbs)
Vegetables 2 Cup (32 tbs) (onions, peppers, carrot, spinach, mushrooms used)
Salt 1 Teaspoon
Red pepper 1 Teaspoon
Dry mint powder 1 Teaspoon

Directions

MAKING

1. Prepare the batter with Yogurt, sooji and water.

2. Add veggies, add spices and then cook for 5 mins on a skillet with a little bit of oil.

SERVING

3. Enjoy with tomato chutney.
