"Pav Bhaji" is a classic North Indian street food dish consisting of vegetables cooked in a flavorful blend if spices, with the addition of a little butter for richness, served with soft, golden, buttery bread.What's more? |Chopped green beans||3/4 Cup (12 tbs)|
|Fresh tomatoes||3 Large , chopped|
|Broccoli stalk||1 , chopped|
|Chopped ash gourd||1 Cup (16 tbs) (winter melon (or pumpkin))|
|Potatoes||4 Large , peeled and chopped|
|Cauliflower head||1 , chopped|
|Carrots||2 , chopped|
|Turmeric powder||1 Teaspoon|
|Onion||1 Medium , chopped|
|Boiled peas||3/4 Cup (12 tbs)|
|Crushed garlic||1 Tablespoon|
|Pav bhaji masala||3 Tablespoon (can be purchased at any Indian food store)|
|Butter||3 Tablespoon (1 tbsp for each batch)|
|Bread rolls||8 (dinner rolls and buns work nicely, but you can use regular sliced bread)|
|Garnishes||3 Tablespoon (grated radish, paneer, chopped onions, lemon slice and parsley , optional)|
In a pressure cooker, cook all the vegetables (except peas, garlic and onions) with turmeric and salt for 20 minutes.
Once done, mash the vegetables. Ensure not to mash very finely.
Heat skillet and add butter and oil to it. Saute garlic until golden brown.
Add onion, and cook until translucent.
Add pav bhaji masala and mix well. Add mashed vegetables, boiled peas and mix well.
Garnish with grated radish, paneer, chopped onions, lemon slice and parsley (optional).
For the pav, melt butter in a pan and rub the bun/ bread pieces in it. Flip and cook both sides until golden brown.
Serve pav with bhaji and enjoy!
Do not add spinach and okra for bhaji.
Addition of potato is mandatory.
