Raw mango | 1 1/2 Kilogram , cut | |
Salt | 90 Gram (plus 4 tablespoons for Soaking mangoes overnight) | |
Turmeric powder | 2 Tablespoon | |
Chili powder | 3 Tablespoon | |
Fenugreek powder | 4 Tablespoon | |
Fennel powder | 5 Tablespoon | |
Onion seed | 1 Tablespoon | |
Mustard oil | 200 Milliliter |
GETTING READY:
In a large bowl, combine mango pieces with 4 tablespoons of salt and mix well. Cover the bowl and allow to rest for 8-10 hours or overnight.
MAKING:
Drain excess water from mango pieces and sun-dry for 2-3 hours on a cloth.
In a large bowl, combine mustard oil with salt, turmeric, chili powder, fenugreek powder, fennel powder, onion seeds and mix well to form a paste.
Add mango pieces and mix well.
Transfer to a bowl or jar, cover well and allow to sit for 4-5 days. Place the pickle jar in sun light for 4-5 hours to increase its shelf life.
