Another recipe from Dadi ka Pitara! Aam ka Khatta Achaar it is, tangy flavor of raw mangoes loaded with some awesome spices! A holy grail recipe in every Indian Household. Perfect summer recipe for raw mangoes.

Ingredients

Raw mango 1 1/2 Kilogram , cut
Salt 90 Gram (plus 4 tablespoons for Soaking mangoes overnight)
Turmeric powder 2 Tablespoon
Chili powder 3 Tablespoon
Fenugreek powder 4 Tablespoon
Fennel powder 5 Tablespoon
Onion seed 1 Tablespoon
Mustard oil 200 Milliliter

Directions

GETTING READY:

In a large bowl, combine mango pieces with 4 tablespoons of salt and mix well. Cover the bowl and allow to rest for 8-10 hours or overnight.

 

MAKING:

Drain excess water from mango pieces and sun-dry for 2-3 hours on a cloth.

In a large bowl, combine mustard oil with salt, turmeric, chili powder, fenugreek powder, fennel powder, onion seeds and mix well to form a paste.

Add mango pieces and mix well.

Transfer to a bowl or jar, cover well and allow to sit for 4-5 days. Place the pickle jar in sun light for 4-5 hours to increase its shelf life.
