Mutton Xacuti Meat Cooked in roasted Spices And Coconut

A traditional favorite in Goa, India Xacuti is well loved and for good reason. Meat, Chicken, Fish or even veggies are simmered is a blend of aromatic whole roasted spices like red chillies, cumin, fennel, coriander, cloves, poppy seeds, cinnamon, cardamom star anise and blended with turmeric, roasted onion, garlic and coconut. The use of coconut oil in this recipe is traditional and very on trend today for it's health benefits. In this recipe, Mutton is used, but can be easily substituted for beef, lamb, chicken, fish or veggies. Recipe shared by my friend David D'souza of Dusty's Foodie Adventures.


Red kashmiri chilies 10 , deseeded
Cumin seeds 1/2 Teaspoon
Peppercorn 1/2 Teaspoon
Fennel seed 1/2 Teaspoon
Garlic 8 Clove (40 gm)
Poppy seeds 2 Teaspoon
Coriander seeds 2 Tablespoon (Leveled)
Cinnamon 1 Inch
Cardamom 2
Star anise 1
Turmeric 1/2 Teaspoon
Cloves 5
Coconut 1 Cup (16 tbs)
Red onions 2 , one coarsely chopped and one medium diced
Tamarind 1 Tablespoon , soaked in water
Coconut oil 5 Tablespoon
Mutton 2 Pound , bone in (lamb leg or shoulder)
Lemon juice 1 Tablespoon
Salt To Taste



Coat mutton with lemon juice and salt.

In a large pan, roast chillies, cumin seeds, peppercorn, fennel, cloves, poppy seeds, coriander seeds, cinnamon, cardamom, star anise and allow to cool.

In same pan, roast chopped onions, garlic and transfer to a bowl to cool.

In a food processor, combine the cooled spice mixture and turmeric. Grind to a fine powder.

In a pan, fry coconut and melt coconut oil.

Add onion and garlic mixture, coconut mixture and blend well to get a smooth paste.

In a deep pan/ casserole, sauté diced onions. Add spice mixture and fry for 1 minute. Add mutton, soaked tamarind and stir well.

Cover with a lid and cook for 40 minutes. Add salt, sugar and water as required.

Squeeze lemon juice over gravy before serving.
