Malai Kofta

With Malai Kofta, it is always celebration time! this is one dish which nobody will get bored of even if it is served at every party. The koftas themselves are so tasty that they can easily be served as a snack along with tea. You could microwave or shallow fry the koftas if you want to avoid deep frying them.

Ingredients

For the koftas
Crumbled paneer 1/2 Cup (8 tbs) (cottage cheese)
Chilli powder 1 Teaspoon
Boiled and mashed potatoes 1/2 Cup (8 tbs)
Turmeric powder 1 Pinch (haldi)
Grated ginger 1 Teaspoon (adrak)
Grated carrot 1/4 Cup (4 tbs)
Finely chopped capsicum 2 Tablespoon
Grated garlic 1/2 Teaspoon (lehsun)
Tomato ketchup 1 Tablespoon
Chopped coriander 1 Tablespoon
Cornflour 3 Tablespoon
Salt To Taste
Roughly chopped onions 1 Cup (16 tbs)
For the gravy
Cashewnuts 2 Tablespoon (kaju)
Fresh tomato pulp 2 Cup (32 tbs)
Butter 1 Tablespoon
Garlic paste 1 Teaspoon
Ginger paste 1/2 Teaspoon
Green chilli paste 1/2 Teaspoon
Sugar 1 Teaspoon
Garam masala 1 Teaspoon
Chilli powder 1 Teaspoon
Salt To Taste
Fresh cream 2 Tablespoon
Other ingredients
Oil 1 Cup (16 tbs) (for deep frying)
Fresh cream 1 Tablespoon (for garnish)

Directions

Making

For the koftas

In a deep bowl, combine all the ingredients. Mix well.

Divide the mixture into 8 equal portions and roll each portion into a cylindrical shape.

In a deep non-stick kadhai, heat oil. 

Deep-fry, a few koftas at a time, till they turn golden brown in colour from all the sides.

Drain on an absorbent paper and keep aside.

For the gravy

Combine onions and cashews in a mixer and blend till smooth. Keep aside.

In a deep non-stick pan, heat butter.

Add onion-cashew paste, garlic paste, ginger paste and green chilli paste.

Cook on a medium flame for 2 minutes, while stirring occasionally.

Add fresh tomato pulp, sugar, garam masala, chilli powder, salt and ½ cup of water.

Mix well and cook on a medium flame for 3 to 4 minutes, while stirring occasionally.

Switch off the flame and add fresh cream. Mix well.

Serving

Arrange the koftas in a serving dish. Pour the hot gravy over the koftas.

Serve immediately garnished with fresh cream.
