In a pan, heat the oil and sauté ginger for a minute.
Add radish, salt, turmeric powder, red chili powder and garam masala Mix and cover with lid.
Cook for 3 to 4 minutes on medium heat.
Add eggplant and cook for 5 minutes.
Sprinkle amchur powder and mix well.
Serve with roti and raita.
