Saag meat or Mutton Palak

Ingredients

Mutton chunks 3/4 Kilogram
Onion 4 , grinded
Tomato 4 Medium , pureed
Mustard oil 1 Tablespoon
Bay leaf 1
Cardamom 1
Clove 2
Cinnamon 1
Dried red chili 1
Spinach 1 Bunch (100 gm)
Coriander powder 1 Teaspoon
Garam masala 1 Teaspoon
Turmeric 1 Teaspoon
Red chili powder 1/2 Teaspoon
Green chili 1
Salt To Taste

Directions

GETTING READY

Wash, blanch and grind the spinach to form a paste. Set aside

MAKING

In a heavy bottom vessel, heat the oil, add bay leaf, cardamom, cinnamon, cloves and roast it on low heat.

Stir fry onions for about 1 hour, stirring it in between. Add coriander powder, red chili powder, turmeric and sauté for about 2 minutes more.

Add mutton and stir fry for about 45 minutes on low heat.

Pour spinach puree. Cover and cook till mutton is 80% cooked.

Pour tomato puree and cook for about 10 -15 minutes. Add little water as well.

Sprinkle salt and cook for another 5 minutes.

Sprinkle garam masala.

SERVING

Serve with rice.

NOTES

The more you cook the meat uncovered the better it would taste.

Always add tomato and salt towards the end else mutton would take forever to cook.
