Vegan Spinach Jalapeno Omelette - Perfect Protein Iron Breakfast

Many vegetarians worry about not getting enough iron or protein in their diets.These spinach Jalapeno stuffed omelettes are high in protein and iron, and a delicious way to jump-start your metabolism and fuel your energy and they are so quick and easy to prepare.

Ingredients

Chickpea flour 1 1/4 Cup (20 tbs)
Rice flour 1/4 Cup (4 tbs)
Flax seed meal 2 Teaspoon
Salt To Taste , divided
Water 1 Cup (16 tbs) (as needed)
Turmeric powder 1 Pinch
Ginger garlic paste 1 Teaspoon
Spinach 1 Cup (16 tbs) , roughly chopped
Sliced jalapeno pepper 1 Teaspoon (Optional)
Pine nuts 2 Tablespoon
Pomegranate seeds 2 Tablespoon
Olive oil 1 Tablespoon

Directions

MAKING

In a large bowl, add in chickpea flour, rice flour, flax seed meal and salt; mix well.

Pour little water at a time to make a thin batter.

Season with turmeric powder and ginger garlic powder. Set aside.

In a heavy bottom pan, heat olive oil and add in the spinach; season with salt and sauté until wilted.

Add in the jalapeno and sauté for a few seconds. Set aside.

Heat a heavy bottom flat pan on medium – high and pour a ladle full of batter and spread. Cook on one side, smear some oil and flip and cook on the other side.

Flip again and place the spinach stuffing. Fold it and place on the serving plate.

 

SERVING

Garnish with pine nuts and pomegranate seeds. Serve and enjoy!
