Steamed Dosa - Chiranjeevi Dosa - Secret Restaurant Recipe Revealed

Have you ever visited CHUTNEYS restaurant in Hyderabad? It is popular for the variety of dosas and idlis they offer. Early this summer, when my brother visited us, he talked about this dosa that he had in CHUTNEYS. He explained how it looks and tastes like. It seemed like a great idea to try it at home. When I made it for him, to my surprise he said it tasted and looked exactly as that in the restaurant. So here is the recipe for that soft and yummy melt in mouth Steamed Dosa. This Dosa is also called as Chiranjeevi Dosa as the popular South Indian Actor Chiranjeevi loves it too.

Ingredients

Rice 1 Cup (16 tbs) (Sona Masoori)
Idli rice 1/2 Cup (8 tbs)
Urad dal 1/4 Cup (4 tbs) (skinless)
Puffed rice 1/2 Cup (8 tbs)
Pressed rice 1/2 Cup (8 tbs)
Fenugreek seeds 1/2 Teaspoon
Oil 2 Tablespoon (Optional)
Sea salt To Taste
Baking soda 1 Pinch
Water 3 Cup (48 tbs)

Directions

GETTING READY

1. Soak basmati rice, parboiled rice, urad daal, fenugreek seeds, pressed rice and puffed rice in water for about 5 hours.

2. Grind everything together with the remaining water to a very fine paste. Scrape the sides while grinding.

3. Transfer the batter to a steel container and place it in a warm place to ferment until the batter is light and fluffy.

 

MAKING

4. Mix baking soda and salt to the batter.

5. Heat a dosa pan. Check for temperature by sprinkling some water on the pan. If it sizzles away, the pan is ready.

6. Grease the pan with oil and spread a couple of laddle-full of batter on the pan.

7. Cover it with a lid and let the dosa steam under the lid until the bottom is nicely toasted.

8. Sprinkle oil on top, if desired.

 

SERVING

9. Serve the soft and fluffy dosa with a chutney of your choice. Enjoy.
