Carrot Cucumber and Rajma Salad in Mint Dressing

A light salad loaded with vitamin A from carrot and mint together with protein-rich rajma too, the Carrot, Cucumber, Rajma Salad in Mint Dressing is a treat to your taste buds and eyes, in more ways than one. Not only is the salad beautiful to behold, it also provides excellent nourishment for your eyes and eye muscles. Dont forget the honey in the dressing as it goes very well with the mint.

Ingredients

Thinly sliced carrot 1 Cup (16 tbs)
Thinly sliced cucumber 1 Cup (16 tbs)
Boiled kidney beans 1/2 Cup (8 tbs)
Sliced spring onions 1/2 Cup (8 tbs)
For the dressing
Mint leaves 2 Tablespoon , finely chopped
Honey 4 Teaspoon
Fresh lemon juice 1 Tablespoon
Salt To Taste

Directions

MAKING

For the dressing – in a blender, add in all the ingredients and blend well. Set aside.

For the salad – in a large bowl, toss together all the ingredients.

 

SERVING

Serve the salad with some grilled vegetables.
