Papdi bought from market can let you down at times, sometimes its not crispy, sometimes its just too thick. Here is a perfect papdi recipe so you can make it at home.
Semolina | 1 Cup (16 tbs) | |
Plain flour | 1 Cup (16 tbs) | |
Salt | 1 Teaspoon (To taste) | |
Oil | 2 Cup (32 tbs) (For deep Frying) |
MAKING
In a large bowl add the semolina, flour and salt and knead it into asemi stiff dough by adding water gradually.
Cover the kneaded dough and let it rest for 5-10 minutes
Use a rolling pin to roll out the dough. Use a cutter to cut out small rounds. Or roll out individual small rounds.
Prick the rolled out rounds so that they do not puff up.
Let these rest for atleast 30 mins before frying.
In a kadhai that has preheated oil, fry the papdi till they turn crisp and golden brown.
SERVING
Use this papdi to make a variety of chaat items like dahi papdi, sev papdi, mix chaat, papdi chat, bhel, etc.
