Rajgira Paneer Paratha

These paneer stuffed parathas are a meal in their own right. Remember not to give too much force when patting the parathas to ensure that they do not break.


Rajgira atta 1 Cup (16 tbs)
Mashed potato 1/4 Cup (4 tbs)
Fresh ground black pepper 1/2 Teaspoon
Rock salt To Taste
Water 1/4 Cup (4 tbs) (as needed)
Other ingredient
Rajgira atta 1 Tablespoon (for dusting as needed)
Oil 2 Tablespoon (as needed)
For stuffing
Grated paneer 1 Cup (16 tbs) (cottage cheese)
Finely chopped green chili 2 Teaspoon
Lemon juice 1/2 Teaspoon
Powdered sugar 1/2 Teaspoon
Finely chopped coriander 2 Teaspoon (Optional)
Rock salt/Table salt To Taste



For Stuffing:

1.In a bowl, combine grated paneer, green chili, lemon juice, sugar, coriander, and rock salt. Mix well and divide into 8 equal portions.

For Dough:

2.In a bowl, add rajgira atta/flour, potato, pepper powder and rock salt. Add enough water and knead into semi soft dough. Divide dough into 8 equal portions.

3.Use little flour and roll out a portion of dough into 3-inch circle. Place a portion of stuffing in the centre of the circle, bring the edges to the centre and seal tightly.

4.Roll out again into 4-inch circle, using little rajgira atta/flour.

5.Heat a non-stick griddle and cook the paratha, using little oil until golden brown on both sides. Repeat to make more.



6.Serve hot with green chutney and fresh curd.
