Yet another easy, delicious, healthy vegan side dish or enjoy it as a main with Roti, Parantha or your favourite bread. Combining two common vegetables Zucchini and Potatoes to create this flavourful Indian dish.
|Zucchini||2 , peeled, chopped|
|Vegetable oil||2 Tablespoon (of your choice)|
|Mustard seeds||1/2 Teaspoon|
|Cumin seeds||1/2 Teaspoon|
|Dried red chilli||1|
|Onion/1/2 medium onion||1 Small , peeled, chopped|
|Garlic||4 Clove (20 gm) , peeled, chopped|
|Potatoes||2 Large , peeled, chopped|
|Tomatoes/1 large one||2 Small , peeled, chopped|
|Garam masala||1/2 Teaspoon|
|Cilantro leaves||1 Tablespoon , chopped (to garnish)|
In a saucepan, heat oil, add mustard seeds, cumin, crushed red chilli, chopped onion, chopped garlic and sauté well. Add salt, turmeric and stir well.
Add chopped potatoes and stir well. Cover with lid and cook for 3-4 minutes.
Add tomatoes and allow to cook for 2 minutes. Add zucchini and cook until the vegetables cook well.
Garnish with garam masala and cilantro leaves.
Serve and enjoy!
