Tasty Zucchini Potato Masala Recipe, Easy Vegetarian Side Dish Idea

Yet another easy, delicious, healthy vegan side dish or enjoy it as a main with Roti, Parantha or your favourite bread. Combining two common vegetables Zucchini and Potatoes to create this flavourful Indian dish.

Ingredients

Zucchini 2 , peeled, chopped
Vegetable oil 2 Tablespoon (of your choice)
Mustard seeds 1/2 Teaspoon
Cumin seeds 1/2 Teaspoon
Dried red chilli 1
Onion/1/2 medium onion 1 Small , peeled, chopped
Garlic 4 Clove (20 gm) , peeled, chopped
Potatoes 2 Large , peeled, chopped
Tomatoes/1 large one 2 Small , peeled, chopped
Garam masala 1/2 Teaspoon
Cilantro leaves 1 Tablespoon , chopped (to garnish)
Salt To Taste
Tumeric 1/2 Teaspoon

Directions

MAKING:

In a saucepan, heat oil, add mustard seeds, cumin, crushed red chilli, chopped onion, chopped garlic and sauté well. Add salt, turmeric and stir well.

Add chopped potatoes and stir well. Cover with lid and cook for 3-4 minutes.

Add tomatoes and allow to cook for 2 minutes. Add zucchini and cook until the vegetables cook well.

Garnish with garam masala and cilantro leaves.
