Awesome Asparagus Subzi

When compared to all vegetables, asparagus contains the highest percentage of folate in addition to numerous vitamins and minerals, making it a healthy choice for any diet.
Asparagus is one of the most nutritionally well-balanced vegetables in existence.
I simply love blanched asparagus with butter, salt and pepper but once in a while I love to prepare something different that my in-laws can enjoy!

Ingredients

Asparagus 20 , chopped, hard portion discarded
Oil 2 Tablespoon
Whole red dry chili 3
Cumin seeds 1/2 Tablespoon
Salt To Taste
Green chili paste To Taste
Garlic paste 1 Teaspoon
Ginger paste 1 Teaspoon
Coriander cumin powder 1 Teaspoon
Turmeric powder 1 Pinch
Sesame seeds 1 Teaspoon
Fresh lime juice/Lemon juice 1 Tablespoon

Directions

MAKING

1. In a pan, heat oil, add red chili and cumin.

2. Add in the asparagus, add salt and stir to mix. Add green chili paste, garlic paste, ginger paste ans coriander cumin powder, mix again.

3. Cook covered for 4-5 minutes, stirring occasionally.

4. Add turmeric, sesame and lime juice, stir to mix.

 

SERVING

5. Garnish with coriander leaves and sesame seeds. Serve with roti or rice.
