Roasted garlic | 6 | |
Cumin powder | 1 Teaspoon | |
Crushed black pepper | 1 Teaspoon | |
Red chili paste | 1 Teaspoon | |
Salt | To Taste | |
Juice of lime/Juice of lemon | 1/2 |
GETTING READY
For the marinade – In a large bowl, place the roasted garlic and mash with a muddler.
Add in the remaining ingredients and mix well.
Rub the marinade all over the mutton chop and cover with saran wrap. Refrigerate overnight.
MAKING
When marinated, drizzle with olive oil and sear in a pan on each side for a few minutes.
In a baking dish, place the red onion and top with chops. Roast in the oven for 20 – 30 minutes.
SERVING
Serve with some salad and rumali roti.
