|Light cream||2 Cup (32 tbs)|
|Milk||1 Cup (16 tbs)|
|Egg yolks||4 , well|
|Butter mints||1/2 Cup (8 tbs) , chopped|
|Whipping cream||1 Cup (16 tbs)|
Melt chocolate; set aside.
In a medium saucepan, combine sugar and cornstarch.
Stir in light cream, milk and salt.
Stir constantly over medium heat until mixture thickens.
Remove from heat.
Stir about 1 cup hot mixture into beaten egg yolks.
Add egg yolk mixture to remaining hot mixture in saucepan.
Continue cooking over low heat 3 minutes.
Stir in melted chocolate.
Add crushed mints and whipping cream.
Pour into liner of ice cream freezer.
Freeze according to manufacturer's directions.
