These cookies are so delicious and even if you dont make the cookies into sandwiches I definitely recommend still making them.

Baking soda | 1/2 Teaspoon | |
Salt | 1 Pinch | |
Softened butter sticks | 1 | |
Sugar | 1/2 Cup (8 tbs) | |
Brown sugar | 1/2 Cup (8 tbs) | |
Vanilla | 1 Teaspoon | |
Egg | 1 | |
Semi sweet chocolate chips | 1 Cup (16 tbs) | |
Ice cream | 1 Cup (16 tbs) (of choice) | |
Optional extras: | ||
Mini chocolate chips | 1/2 Cup (8 tbs) | |
Melted chocolate | 1/2 Cup (8 tbs) | |
Chopped nuts | 1/2 Cup (8 tbs) |
GETTING READY:
Preheat the oven to 375°F.
Line baking tray with parchment paper.
MAKING:
In a large bowl, combine all purpose flour, baking soda, salt and mix well.
In another bowl, cream together butter, sugar, brown sugar, vanilla and egg. Mix the butter mixture with flour mixture until it combines well.
Add chocolate chips and give the mixture a good stir.
Scoop the mixture on lined baking sheet. Pop into oven and bake at 375°F for 10 minutes. Once done, allow it to cool completely.
Scoop ice cream over cooled cookies, spread well and top with another cookie. Sprinkle mini chocolate chips, melted chocolate or chopped nuts over it if desired.
Place on a try and pop into freezer until serving.
