In Part 4, the final chapter of Beneath the Surface, the oyster fishermen, shuckers and restaurateurs of New Orleans talk about what lies ahead for Gulf seafoodwhich has become the most tested in the history of commercial fishing. You can hear the apprehension in their voices, and see it in their faces. But you also get a sense of their resolve. It's hard to go far when it's one step forward, two steps back. But get there they will. It may take a year or two, or more, but like the Saints in '09, these guys will be part of a great comeback story. Count on it.
