MAKING
1) In a frying pan, heat the bacon fat or butter.
2) Add the mashed potato, season with salt and pepper to taste.
3) Blend thoroughly until the mixture is smooth.
4) Then stir in the chopped onion and mushrooms.
5) Cook over a low heat for about 10 minutes, until crispy brown underneath.
6) Fold over with a slice or palette knife and transfer to a plate.
SERVING
7) Serve the Hash Browns immediately.
