Greek Shrimp and Potato Salad A La Pappas's picture

White potatoes 8 Large , boiled
Fresh parsley sprigs 8 , chopped
Whole scallions 4 , sliced
Green bell pepper 1 , chopped
Olive oil 1/4 Cup (4 tbs)
Wine vinegar 2 Tablespoon
Garlic 2 Clove (10 gm) , mashed with garlic press
Salt 1 Teaspoon
Romaine head 1 , washed, torn into bite sized pieces
Watercress sprigs 12
Cucumber 1 , unwaxed, sliced
Avocado 1 , peeled, pitted and sliced
Feta cheese 1/4 Pound , sliced
Shrimp 4 Large , peeled, deveined and steamed for 4 minutes (per person)
Canned anchovy fillets 3 1/2 Ounce (1 can)
Greek olives 12
Radish 1 (per person)
Scallion 1 (whole, per person)
Ripe tomato 1 (per person)
Olive oil 1 Tablespoon (per person)
Wine vinegar 1 Tablespoon (per person)
Dried oregano To Taste



1. Drain all the boiled potatoes so that excess water is removed.

2. Slightly cool the potatoes so that they can be peeled and sliced.

3. Toss the warm potatoes with olive oil, vinegar, salt, parsley, scallions and green pepper.

4. Bed dinner plates with romaine.

5. Place spoonfuls in the center portion of every plate.

6. Arrange the sliced cucumber pieces, avocado slices, anchovy fillets, jumbo shrimp, feta cheese and sprigs of watercress on each place.


7. Drizzle olive oil and wine vinegar on every plate.

8. Sprinkle oregano.


9. Serve Greek Shrimp And Potato Salad A La Pappas immediately.
