Grated zucchini stands in for the noodles in this delicious take on a Greek salad.
|Grated zucchini||5 Cup (80 tbs)|
|Cucumber||2 Medium , peeled and chopped into bits|
|Tomatoes||3 Medium , chopped|
|Red onion||1 Small , thinly sliced|
|Pitted black olives||1/4 Cup (4 tbs) , finely chopped (like kalamata)|
|Dried oregano||1/2 Teaspoon|
|Freshly ground black pepper||1/8 Teaspoon|
|Red wine vinegar||2 1/2 Tablespoon|
|Canola oil/Safflower oil||2 Tablespoon|
|Reduced fat feta cheese crumbles||2 Tablespoon|
In a large bowl, combine all vegetables.
In another bowl, combine vinegar, oil, dried oregano, black pepper and whisk well.
Pour over salad and toss well.
Sprinkle cheese, serve and enjoy!
