How To Make Zucchini Noodle Greek Salad

Grated zucchini stands in for the noodles in this delicious take on a Greek salad.


Grated zucchini 5 Cup (80 tbs)
Cucumber 2 Medium , peeled and chopped into bits
Tomatoes 3 Medium , chopped
Red onion 1 Small , thinly sliced
Pitted black olives 1/4 Cup (4 tbs) , finely chopped (like kalamata)
Dried oregano 1/2 Teaspoon
Freshly ground black pepper 1/8 Teaspoon
Red wine vinegar 2 1/2 Tablespoon
Canola oil/Safflower oil 2 Tablespoon
Reduced fat feta cheese crumbles 2 Tablespoon



In a large bowl, combine all vegetables.

In another bowl, combine vinegar, oil, dried oregano, black pepper and whisk well.

Pour over salad and toss well.


Sprinkle cheese, serve and enjoy!
