How to Make a Healthy Greek Omelette

Learn how to make this delicious omelette with fresh vegetables.

Ingredients

Fresh spinach 1 Cup (16 tbs)
Zucchini 1/2 , cubed
Tomato 1/2 , cubed
Onion 1/2 , cubed
Fresh basil/Parsley 2 Tablespoon , chopped finely
Feta 2 Tablespoon
Egg 2
Egg white 1

Directions

MAKING

1. Sautée your veggies in a swirl of olive oil, set aside in a bowl.

2. Add your eggs to a nonstick pan and swirl to cover. Let them "set" on medium-high. Run your spatula around the sides to loosen.

3. Add veggies to one half of the eggs, leave the other side plain. Top with feta.

4. Gently fold over the plain side in half. Did it rip?! Don't worry you didn't screw it up, especially if you're using the same size Pan as me for a thinner omelette texture, this happens. Cover it up with the remaining fresh herbs and feta and no worries!

SERVING

5. Serve hot.
