Greek Pasta Salad recipe plus a tour of my new house and a happy announcement! This pasta salad recipe has tomatoes, green beans, olives, oregano, vinaigrette and cheese.
Rotini pasta | 6 Ounce (2 cups, dry) | |
Green beans | 1 Cup (16 tbs) (fresh or frozen) | |
Olive oil | 2 Tablespoon | |
Red wine vinegar | 2 Tablespoon | |
Garlic | 1 Clove (5 gm) | |
Dried oregano | 1 Teaspoon | |
Salt | 1/2 Teaspoon | |
Black pepper | 1/2 Teaspoon | |
Cherry tomatoes | 1 Cup (16 tbs) | |
Diced yellow bell pepper | 1 Cup (16 tbs) | |
Sliced olives | 1/2 Cup (8 tbs) (black or kalamata) | |
Chopped parsley | 1 Tablespoon | |
Feta cheese | 2 Ounce (optional) | |
Water | 1 Quart |
MAKING:
Boil water in a pot and add salt to it. Add pasta and cook for 8 minutes (as per package directions)
Add green beans and cook for another 2 minutes. Drain and rinse with cold water.
In a large bowl, combine oil, vinegar, garlic, salt, pepper, oregano and whisk well.
Add pasta, green beans and mix well.
Add cherry tomatoes, yellow bell pepper, olives, parsley, cheese and toss well.
Refrigerate until serving.
