1. On a serving platter, place the pita chips.
2. Top with the red bell pepper, tomatoes, olives, and cheese. Set aside.
3. In a small bowl, stir together the yogurt, cucumbers, lemon juice, and salt.
4. Drizzle all over the nachos.
