Greek Fattoush Salad

What's wrong with combining two amazing Mediterranean salads? Absolutely NOTHING!


For salad:
Romaine lettuce head 2 , ends trimmed roughly chopped
Chickpeas 1 Cup (16 tbs)
Cucumber 1 , sliced
Halved cherry tomatoes 1/2 Cup (8 tbs)
Red onion 1/2 , chopped
Chopped mint 1 Cup (16 tbs)
Chopped parsley 1 Cup (16 tbs)
Toasted pita chips 1/2 Cup (8 tbs) , crushed (for topping)
For dressing:
Olive oil 3 Tablespoon
Red wine vinegar 1/4 Cup (4 tbs)
Grated garlic 1 Clove (5 gm)
Tahini 3 Tablespoon
Lemon juice 1 Tablespoon (from 1 lemon)
Basil 1/2 Teaspoon
Onion powder 1/2 Teaspoon
Salt 1/2 Teaspoon
Celery seed 1/2 Teaspoon
Thyme 1/2 Teaspoon
Spicy mustard 1/2 Teaspoon



In a large bowl, combine together lettuce heads, chickpeas, cucumber, cherry tomatoes, red onion, mint and parsley. Mix well.

For the dressing, combine together olive oil, red wine vinegar, grated garlic, tahini, lemon juice, basil, onion powder, salt, celery seed, thyme and mustard in a large bowl. Mix well for the ingredients to blend.

Mix desired quantity of dressing and crushed-toasted pita chips with the salad.
