Greek-Style Quesadilla Recipe - My Fav Quick Lunch

This Greek style Quesadilla is perfect for a quick and easy lunch or dinner, and I love how flavorful it is with the feta cheese and kalamata olives. Mmm!

Ingredients

Butter 2 Teaspoon
Flour tortilla 1
Sliced mozzarella cheese 2 Ounce
Cooked chicken breast 1/2 , sliced
Scallions 2 , sliced
Pitted kalamata olives 8 , sliced ((6
Halved cherry tomatoes 1/2 Cup (8 tbs) ((or tomato slices))
Crumbled feta cheese 1/4 Cup (4 tbs)

Directions

MAKING

1. Heat up a large pan over medium flame and melt butter in it.

2. Add the tortilla and layer mozzarella, chicken, scallion, olives, cherry tomatoes, and feta cheese on one half of the tortilla round. Cook for 5 minutes or until the bottom of the tortilla turns golden brown and the cheese inside has melted.

3. Flip the unlayered half of the tortilla onto the other side and press together.

4. Remove the quesadilla from pan and slice into triangles.

 

SERVING

5. Serve and enjoy!
