Healthy Cooking Episode16: Spicy Spanakopita

This savory spinach pie is a classic Greek snack or main dish packed with nutrient rich spinach, onions, and fresh herbs. The original recipe is also packed with a LOT of fat. In my recipe I cut down on all that fat and supersize the nutrition.

Ingredients

Fresh spinach 1 Pound
Fresh kale 1 Pound
White onion 1 1/2 Large
Green onions 1 Bunch (100 gm)
Fresh minced garlic 1/4 Cup (4 tbs)
Chopped fresh parsley 1/2 Cup (8 tbs)
Chopped fresh dill 1/2 Cup (8 tbs)
Jalapeno 4 (2
Crushed red chili flakes 1 Tablespoon
Dried mint 1 Teaspoon
Nutmeg 1 Pinch (Optional)
Lemon juice 1 Teaspoon (Optional)
Feta cheese 1 Cup (16 tbs)
Olive oil 1 Tablespoon
Salt and pepper To Taste
Granulated garlic 1 Tablespoon
Onion powder 1 Tablespoon
Cayenne pepper 1 Tablespoon
Water 2 Tablespoon
Wonton wraps 200 Gram

Directions

GETTING READY

In a food processor, add in the white onion, garlic, parsley, dill and jalapeno in small portions. Puree until smooth and set aside.

Add in all of kale and half the spinach into food processor. Pulse until it’s crumbly but, not paste like.

MAKING

In a pan, add in the oil and 2 tablespoons of water. Cook garlic, onion, parsley puree for 3 minutes, add in the kale/spinach puree and half of the whole spinach. Cook for 5-7 minutes. Take out into a large bowl and set aside to cool.

Once the filling is cool using a strainer squeeze out excess liquid.

Add in the cheese, crushed red chili flakes, dried mint, nutmeg, lemon juice, salt and pepper, granulated garlic, onion powder and cayenne pepper. Mix well.

Add 1 tablespoon of filling to the wrappers and use a dab of water around the edges to seal them closed.

You can boil or bake for the healthiest option. Or shallow pan fry as well. It’s up to you.

SERVING

Serve with your choice of condiment.
