Down Home Tomato Gravy

Even though my channel is primarily geared towards grilled, barbecued, smoked foods, I also enjoy sharing "How To" video recipes of some of the food I grew up on in south Mississippi, and this tomato gravy was something I had all through my childhood and once I grew up and left home I continued to make this all through the years. Just simple down home cooking, but it sure is good! Enjoy, and thanks for watching!


Yellow onion 1 Medium , chopped finely
Tomatoes/Canned tomatoes 3 , diced
Evaporated milk/Water 12 Ounce
Bacon fat 3/4 Cup (12 tbs)
All purpose flour 3/4 Cup (12 tbs)
Salt To Taste
Pepper To Taste



1. In a pan, melt the bacon grease. Gradually add in the flour, stirring constantly to form roux.

2. Cook stirring constantly on low flame until the roux is mahogany in color. Adjust the seasoning by adding salt and pepper.

3. Add the onions to the roux, this will stop the browning process of the flour. Continue to cook on low heat. Gradually add in the evaporated milk, if you want a darker gravy you can add water instead of evaporated milk.

4. Adjust the consistency of the gravy by pouring in some water. Cook stirring constantly.

5. Add the tomatoes and cook for another 15 - 20 minutes. If you are using fresh tomatoes, check and adjust the seasoning once again.


6. You can serve this over biscuits, homemade bread, pasta, mashed potatoes or anything else you want. Enjoy!
