A simple basic technique to ensure creamy and glossy gravy every time. Once you master these few steps, you can really make it your own and put your personal spin on it.
|Unsalted butter||1/2 Cup (8 tbs) (or your fat of choice)|
|Unbleached flour||1/4 Cup (4 tbs)|
|Low sodium chicken stock||1 1/2 Cup (24 tbs)|
|Salt and pepper||To Taste|
In a pan, melt and brown the butter.
Using a silicone whisk, vigorously whisk in the flour a bit at a time and simultaneously season with salt and pepper.
After a few minutes, slowly pour in the stock and cook until thick.
Serve the gravy over mashed potatoes.
