Grapefruit And Hazelnut Baked Trout

Hazelnuts 4 Ounce , shelled (100 Gram)
Trout 4 Medium , cleaned
Salt To Taste
Freshly ground black pepper To Taste

1 Preheat the oven to 350 degrees Fahrenheit (180 degrees C/Gas Mark 4)

2 Lightly oil a shallow, ovenproof dish.


3 Place the hazelnuts under the grill and toast until brown.

4 Remove the thin brown skins and discard.

5 Fill the hazelnuts in the cavities of the cleaned trout.

6 Place the trouts in the prepared dish.

7 Season well with salt and pepper.

8 Working over the fish, cut the peel and pith from the grapefruit, so that any excess juice pours over them.

9 Cut the membrane away from the fruit.

10 Arrange the segments around the fish.

11 Bake, uncovered, in the oven for 20-30 minutes, or until the trout are tender.


12 Serve hot.
