Concord Grape Whip

Unflavored gelatin 1 Tablespoon
Grape juice 1 3/4 Cup (28 tbs)
Sugar 1/2 Cup (8 tbs)
Lemon juice 2 Tablespoon
Evaporated milk/Heavy cream 3/4 Cup (12 tbs) , chilled
Instant dry milk powder 1/2 Cup (8 tbs)



1) In a bowl containing 1/2 cup of grape juice, sprinkle the gelatine. Allow the gelatine to soften for about 5 minutes.

2) Place the bowl indirectly over a low flame. Stir till the gelatine dissolves completely.

3) Add in sugar, lemon juice and 1 1/4 cup of grape juice into the gelatine mixture. Let the mixture chill it is has set partially.

4) In a bowl beat the chilled evaporated milk or heavy cream to a stiff consistency. Add in the powdered milk into the whipped cream. Beat the mixture lightly.

5) Take the gelatine mixture out of the refrigerator. Beat it slightly till it becomes foamy. Then gently fold in the whipped cream.

6) Transfer the mixture into a ring mould. Allow it to chill till it has set completely.


7) Serve the Concord Grape Whip garnished with thin slivers of grape on top.
