Herbed Couscous

Here's a quick way to prepare couscous as a side dish, simple enough to serve any night of the week. Instead of basil, try chives, dill or parsley.

Ingredients

Butter 2 Tablespoon
Garlic 2 Clove (10 gm) , mince (1
Green onion 3/4 Cup (12 tbs) , chop
Salt 1 Pinch
Pepper 1 Pinch
Couscous 1 1/2 Cup (24 tbs)
Vegetable stock/Low sodium chicken broth
Fresh basil 1 Tablespoon , chopped finely

Directions

MAKING

1. Place a saucepan over medium flame, and melt butter in it.

2. Drop garlic, onion, salt, and pepper. Stir occasionally and cook for about 3 minutes or until soft.

3. Add couscous, stir and cook for about 2 minutes or until lightly toasted.

4. Pour stock and bring it to a boil.

5. Reduce the heat, cover with lid, and let it simmer for about a minute or until couscous absorbs the liquid and is tender but firm.

6. Drop basil and mix well.

SERVING

7. Garnish with basil leaves and serve hot.
