Here's a quick way to prepare couscous as a side dish, simple enough to serve any night of the week. Instead of basil, try chives, dill or parsley.
Butter | 2 Tablespoon | |
Garlic | 2 Clove (10 gm) , mince (1 | |
Green onion | 3/4 Cup (12 tbs) , chop | |
Salt | 1 Pinch | |
Pepper | 1 Pinch | |
Couscous | 1 1/2 Cup (24 tbs) | |
Vegetable stock/Low | sodium chicken broth | |
Fresh basil | 1 Tablespoon , chopped finely |
MAKING
1. Place a saucepan over medium flame, and melt butter in it.
2. Drop garlic, onion, salt, and pepper. Stir occasionally and cook for about 3 minutes or until soft.
3. Add couscous, stir and cook for about 2 minutes or until lightly toasted.
4. Pour stock and bring it to a boil.
5. Reduce the heat, cover with lid, and let it simmer for about a minute or until couscous absorbs the liquid and is tender but firm.
6. Drop basil and mix well.
SERVING
7. Garnish with basil leaves and serve hot.
