Nutritious Grain Salad with Sweet Potato as a Healthy Dessert

Ingredients

Cracked wheat 1 Cup (16 tbs)
Water 2 1/8 Cup (34 tbs) , divided
Sweet potato 1/2 Pound , peeled, cubed
All spice 1/4 Teaspoon
Kosher salt 1 Pinch
For dressing
Garlic cloves 2 , chopped
Basil leaves 4 , chopped
Sun dried tomato 1 Tablespoon , chopped
Capers 3 Tablespoon (with juice)
Lemon juice 1/2
Vinegar 1 Dash
Olive oil 1/3 Cup (5.33 tbs)
Mustard 1/8 Teaspoon
Other ingredients
Cherry tomatoes 1 Cup (16 tbs) , halved
Chopped cilantro 2 Tablespoon
Corn kernels 1 Cup (16 tbs)

Directions

MAKING

1. In tiger cooker pot, add cracked wheat, pour in 2 cups of water.

2. In a mixing bowl, place sweet potato, season with all spice and salt, sprinkle some water and mix.

3. Put the pot in tiger cooker and place the sweet potato plate over it, cook in sychro mode for 20 to 25 minutes.

4. Blend together all ingredients of the dressing to a smooth texture.

5. To the cooked cracked wheat, add corn, 1/4th cup od the prepared dressing and cherry tomatoes, stir to mix.

SERVING

6. Garnish with cilantro and serve with sweet potaoes.
