Roast Stuffed Goose

Ingredients

Goose 12 Pound
Rendered goose fat 4 Tablespoon
Paprika 1 Tablespoon
Onions 1 Cup (16 tbs) , diced
Potatoes 5 Cup (80 tbs) , grated & drained
Egg 1 , beaten
Kosher salt 4 Teaspoon
Pepper 1 Teaspoon
Garlic powder 1/2 Teaspoon

Directions

GETTING READY

1) Remove all the fat from goose.

2) Chop or grind the gizzard and liver.

3) Preheat oven to 350° F.

MAKING

4) Take a skillet and heat 4 tablespoons fat in it. Add onions and cook until brown.

5) Add potatoes and cook over low heat for about 2 minutes, stirring constantly. Set aside to cool for about 5 minutes.

6) Stir in egg, 1/4 teaspoon pepper, 1 1/2 teaspoons salt and 1 teaspoon paprika.

7) Sprinkle pepper, paprika and remaining salt on the goose.

8) Stuff the goose with the prepared stuffing. Sew the openings or fasten using skewers.

9) Take a roasting pan and place the stuffed duck in it.

10) Cover the pan and roast for about 30 minutes.

11) Remove cover and roast for another 2 1/2 hours or until goose becomes tender and brown.

SERVING

12) Transfer to a platter. Carve and serve immediately.
