BBQ Goat on the Gator Pit (Cabrito Tacos video recipe)

Cooked up some goat on the Gator Pit low-n-slow! Banged out some killer Cabrito Tacos!

GETTING READY:

Preheat the gator pit grill to 250°.

 

MAKING:

Massage the goat meat with olive oil, seasoning, ancho chilli powder and paprika.

Place the marinated meat on the grill and allow to cook for an hour.

In a small bowl, combine 1 cup of olive oil, ½ cup of apple cider vinegar and 2 tablespoons of seasoning. Mix well.

By the end of an hour, brush the meat with prepared marinade liquid as shown in the video and continue to grill.

Grill for 4 hours and repeat brushing for every 30 minutes. Cook until the temperature reaches 183°.

Once done, place the grilled meat over aluminium foil, brush with liquid marinade prepared, pour Mexican dark beer and wrap well.

Place it again on the grill and cook for another 45 minutes-1 hour or until the meat turns tender.

Once done, allow it to cool for 40-45 minutes.

Place little meat on couple of tortillas. Top with chopped cilantro and onions. Place salsa over it and sprinkle cheese over it.
