Gingerbread With Mixed Spice

Ingredients

Plain flour 10 Ounce
Cornflour 2 Ounce
Soda bicarbonate 1 Teaspoon (Leveled)
Mixed spice 1 Teaspoon (Leveled)
Ground ginger 2 Teaspoon (Leveled)
Soft brown sugar 4 Ounce
Chopped candied peel 3 Ounce
Crystallized ginger 2 Ounce , chopped
Treacle 8 Ounce
Milk 1/4 Pint
Corn oil 6 Tablespoon
Egg 1 , beaten

Directions

1. Prepare a 10 x 7 x 2-in. tin, greasing lightly.

2. Sift flour, cornflour, bicarbonate soda and spices together into a mixing bowl.

3. Stir in the sugar, peel and crystallized ginger.

4. Warm treacle, add milk, oil and egg.

5. Pour all at once into the sifted dry ingredients and beat well together.

6. Pour into the prepared tin and bake about 1 1/4 hours in a moderate oven (350°F - Gas Mark 4).
