Grandma's Gingerbread

This gingerbread recipe is great for breakfast or holidays! You will love my grandma's famous gingerbread muffins. They are delicious and perfect make-ahead breakfast or brunch.


Softened butter 1 Cup (16 tbs) (plus extra for greasing)
Sugar 1 Cup (16 tbs)
Molasses 1 Cup (16 tbs)
Eggs 4
Flour 4 Cup (64 tbs)
Buttermilk 1 Cup (16 tbs)
Baking soda 1 Teaspoon
Salt 1 Teaspoon
Ground ginger 1 Teaspoon
Allspice 1/4 Teaspoon
Cinnamon 1/2 Teaspoon
Dried currants 1 Cup (16 tbs) (optional, but Grandma always put them in)
Nuts 1 Cup (16 tbs) (optional)



1.Preheat oven to 325F.

2.Grease muffin tins and keep it ready.


3.In a large bowl, cream together butter, sugar and molasses until light.

4.Add eggs, buttermilk and whisk well.

5.In another bowl, combine flour, baking soda, salt, ginger, allspice, cinnamon and mix well. Add to butter mixture.

6.Add currants, nuts and mix well.

7.Scoop batter into muffin trays and pop into oven.

8.Bake for 25 minutes.


9.Serve and enjoy!


The batter can be covered and refrigerated until ready to cook or up to one week.
