Ingredients

Wild boar roast 1 1/2 Kilogram , butterflied
Bacon rashers 21
For the marinade
Peanut oil 150 Milliliter
Garlic cloves 2 , finely chopped
Fresh thyme 1 Teaspoon , chopped
Salt To Taste
Pepper To Taste
Carnation 1 Teaspoon
Dried herbs 1 Teaspoon
Whole coriander seeds 1 Teaspoon
Juniper 1 Teaspoon
Mustard 1 Teaspoon
For the stuffing
Brown sugar 1 Tablespoon
Onion 1 Medium , finely chopped
Apple cider vinegar 1/4 Cup (4 tbs)
Apple 1 , cut into small pieces
Sauerkraut 2 Cup (32 tbs)

Directions

GETTING READY

1. In a bowl, combine all the marinade ingredients and set aside.

2. In a shallow dish, place the flat piece of meat and pour the marinade on it, flip the meat and pour some marinade on the other side as well.

3. Place in the refrigerator for 4 - 6 hours.

4. Prepare the grill.

MAKING

5. For the stuffing: In a pan, put the brown sugar and add in the onion. Cook briefly and then pour in the apple cider, allow to cook for a few minutes. Add in the apple and sauerkraut and cook stirring, remove from the heat and set aside.

6. On a flat surface, arrange the bacon strips as shown in the video to form a bacon weave. Place the marinated wild boar roast on it and spoon the stuffing on the meat.

7. Gently roll the wild boar roast in to the bacon weave and tie it up as shown in the video.

8. Coat with a barbecue rub on both sides and place on the grill at 120 - 130 degrees C for about 3 to 4 hours.

SERVING

9. Slice and serve.
