Homemade Bratwurst on the Weber


For sausage
Ground pork 5 Pound (or 4lbs ground pork and 1 lb bacon)
Ground coriander 1 Tablespoon
Paprika 1 1/2 Teaspoon
Ground black pepper 1 Teaspoon
Kosher salt 2 Tablespoon
Dried rosemary 2 Teaspoon
Sugar 4 Teaspoon
Cayenne pepper 2 Teaspoon
Sage 1 Tablespoon
Dry mustard 1 1/2 Tablespoon
Nutmeg 1 Teaspoon
Milk/Soy concentrate 1/4 Cup (4 tbs)
Water and garlic blend
Cold water 1 Cup (16 tbs)
Garlic cloves 6
For brats beer mixture
Butter 3 Tablespoon
White onion 1 , thinly sliced
Green pepper 1 , deseeded, thinly sliced
Fresh ground pepper 1/2 Tablespoon
Apple cider vinegar 1/4 Cup (4 tbs)
Brown sugar 1/2 Cup (8 tbs)
Dark beer 2 Bottle (2 l)



1. Soak hog casing in hot water for a few hours then rinse them several times with cold water.

For Sausage:

2. Blend cold water with garlic and set aside.

3. In a large mixing bowl mix ground pork with ground coriander, paprika, black pepper, salt, rosemary, sugar, cayenne pepper, sage, dry mustard, nutmeg, milk, and garlic blended water. Mix well.

4. Stuff hog casing with the meat mixture and freeze for a few hours or until ready to use.


5. Place a foil pan on grill and melt butter in it. Add onion and bell pepper.

6. Season with black pepper and add apple cider vinegar, brown sugar, and beer. Bring to a simmer.

7. Add prepared sausage and simmer for 10-15 minutes.

8. After 10-15 minutes, grill the sausages over direct flame.


9. Serve on bun with sauce and yellow mustard.
