Peach | 2 1/5 Pound , pitted and sliced 1/2 inch thick | |
Brown sugar | 1/4 Cup (4 tbs) | |
Lemon juice | 2 Tablespoon ((fresh)) | |
Cinnamon | 1 Teaspoon , ground | |
Pecan | 100 Gram , coarsely chopped ((pecan halves)) | |
All purpose flour | 1 Cup (16 tbs) | |
Thyme | 1 Tablespoon | |
Unsalted butter | 1 Cup (16 tbs) , freeze chilled | |
Salt | 1/8 Teaspoon |
GETTING READY
1) Preheat the barbecue to medium heat.
MAKING
2) In a bowl, combine the peach slices, blueberries, brown sugar, lemon juice and cinnamon together.
3) In a 10-inch cast-iron pan spread the fruit mixture.
4) In a large bowl, combine the pecans with flour, brown sugar, thyme and salt.
5) Grate the chilled butter into the bowl and rub the butter into the flour mixture with fingertips until it resembles coarse meal.
6) Sprinkle the mixture evenly over fruit mixture.
7) Place on the grill and cook for 20 to 25 minutes or until the topping is golden brown and the fruit is bubbling.
SERVING
8) Slightly cool the barbecued peach blueberry and pecan streusel and serve.
