GETTING READY
1. Prepare the grill for cooking.
MAKING
2. To prepare obatzdam, add some beer to camembert cheese. Mix everything well and then add onions to it. Season with cumin, salt, pepper and paprika.
3. Add butter and egg yolks to obatzdam. Mix that well. Leave the obatzdam to refrigerate for one hour.
4. Meanwhile add barbecue rub to the ground meat and mix it well. Make patties. Keep them aside.
5. Saute onions in olive oil on the grill. Add some diced apples and beer. Let it cook for a while and then add the sauerkraut. Let everything simmer for about 20 minutes. Set the sauerkraut aside.
6. Grill the patties on the kamado cooker on direct heat. Flip after 2 to 3 minutes and grill on the other side as well. Change the setting to indirect heat and then add the provolone cheese on top. Let the cheese melt over the patties.
7. Spread sweet mustard on one half of the bun, top it with sauerkraut and then place the patties on top.
8. Place a dollop of obatzdam on top of the patties and then place the other bun half on top. Repeat to make the rest.
SERVING
9. Cut the burger in two halves and serve.
