Planked Paella Kabobs

Outside the box! I made a paella on my Weber skewering the meat, then planking it, instead of simmering it with the rice. Turned out great!

Ingredients

Lobster tails 4
Jumbo shrimp 1 Pound
Clam 12
Boneless skinless chicken thighs 1 Pound
Bratwrust sausages 5
For spice mix:
Dried mexican oregano 4 Tablespoon
Sweet paprika 2 Tablespoon
Kosher salt To Taste
Freshly cracked black pepper To Taste
Other ingredients:
Olive oil 1/4 Cup (4 tbs)
White onion 1 , diced
Chopped parsley 2 Tablespoon
Garlic cloves 4 , minced
Canned diced tomato 14 1/2 Ounce , strained
Short grain white rice 4 Cup (64 tbs)
Chicken stock 6 Cup (96 tbs)
Asian fish sauce 1 Tablespoon
Saffron 2 Pinch

Directions

GETTING READY

1. Trim down the sizes of meats for even cooking. In a bowl, mix together oregano, sweet paprika, kosher salt and pepper. Add in the chicken pieces and mix to coat. Cover and refrigerate for about an hour.

2. In skewers insert chicken, shrimp, sausage and lobster, continue until the entire meat is consumed (reserve few sausage pieces). Refrigerate.

3. Preheat grill.

MAKING

4. In a pan heat olive oil, add sausages fry until brown, transfer to a plate. Add onion, parsley and garlic, saute until the onions turn translucent. Add tomato, cook until the mixture is caramelized.

5. Stir in the rice. Gradually add in the chicken stock, while stirring constantly. Add fish sauce, the browned sausages and saffron, allow to cook for about 15 minutes.

6. On the heated grill place planks, flip once heated. Place the skewers and the clams, cover and allow to cook for few minutes. Once done remove from heat.

SERVING

7. Serve the skewered kabobs along with rice and clams.
